Hey all!  I hope you had a wonderful Monday!  Mine flew by, per usual, in a whirlwind of emails, phone calls, and stress.  No worries though, it was the good kind of stress.  The kind that makes you really motivated to get everything done 🙂  After work I went to my 6:30 spinning class and hit the grocery store.  After texting with Katie I decided something tonight while grocery shopping.  I am going to make this week MEATLESS.  I honestly feel like my digestive track could use a break, and there are also lots of vegetarian recipes I would like to try.  So there we go, this week will be without meat (for me at least.  I don’t think I could ever convince the husband to give up his BEEF!).  At the grocery store I loaded up on tempeh, fresh whole grain bread, beans, and lots of veggies.  My cart was very GREEN!

I came home to something else that was green…

My dining room!  The husband got the first coat of the light green paint done tonight while I was at work, spinning, and grocery shopping!  This man moves at lightning speed.  He also go the entire section of brown wood paneling in the living room painted.  Just so you can appreciate what a difference painting brown paneling has made, here is another before picture:

I love the beige that we picked out!  It made the room a lot brighter!!  Needless to say, I was very impressed with the husbands progress.  I wanted to jump in and help but I had wanted to start making moves in the kitchen.  I had some plans for more green…

KALE CHIPS!   I have never made these before and am really impressed with how crunchy and delicious they turned out!  I used Kath’s recipe and am in love.  I only ended up using about 1/3 of the kale tonight, so I am looking forward to using the rest tomorrow night!

While these were baking I made two black bean quesadillas.  One for dinner tonight, and one to put in the fridge to take for lunch tomorrow.  I found the recipe in this magazine over the weekend.

Easily the best impulse purchase ever.  This magazine has so many great recipes in it and I cannot wait to try them all!!  Please excuse the mess behind the mag.  With this many re-decorating projects going on at once organization is no where in sight!

Well I am off to bed.  I am waking up early for a workout in AM in my new home gym 🙂 .

Hey bloggies 🙂  I’m back!  I am feeling 1 million times better today!  I have an appetite and energy!  Which are arguably the two things that make me , me!  Here is my weekend in a nut shell…


I slept in!  And when I say slept in I mean really late.  I’m talking sleeping in after late night college drinking late.   After coming home Friday at noon from work because I was sick I slept all afternoon.  Then woke up when Stephen came home and went back to bed until the next morning.  Crazy.  This is what I need to do when I don’t feel well though.  I know my body well enough to know that if I sleep like crazy for a few days the sickness never gets too bad.  But if I dont have an opportunity to sleep like that I will get a fever, stuffy nose, bad cough, the whole sha-bang.

Saturday afternoon we met our realtor to see some houses.  I was pretty excited, but was met with some dissappointing houses.  I never realized how little some people take care of their houses!  One house did NOT have a stove!  INSANITY!  I actually really like that house, but the more you looked at it the more you realized it needed some work; new roof, new siding, :::ahem:: a stove, and they had 4 cats so all the carpet would need to be ripped up and replaced due to Stephen’s crazy allergy.  All in all, we learned a lot about what we don’t want (ie: kitchens need stoves).  We are looking at two more houses this week and a few more Saturday, so the search continues.

I did not have much of an appetite this weekend due to the sickness, but I did spy a rice krispie treat at Starbucks while house searching that looked mighty good.  I gobbled it up on the car ride.

Saturday after house hunting we went out to dinner with Stephen’s family.  I got a nice green salad (unpictured, sorry!) but really was not that hungry.


Sunday was supposed to be my group training run.  Needless to say that did NOT happen.  My alarm went off at 6:30 but I really was not up to it.  When I finally peeled myself out of bed at 9 I went for a nice easy 3 mile run.  My legs felt good, but I was just SO run down from being sick that I could not go any farther.

Later in the day Sunday we helped Stephen’s sister, Elizabeth, paint her new office.  She is a private counselor and her practice just bought a new office space.   I felt like I did not do much painting, to be honest.  I kept feeling so tired and the paint smell was really bothering me.

Hubby is so handy 🙂

After painting we went to an amazing place to celebrate Elizabeth’s birthday!  Grant’s in West Hartford center is probably one of my favorite places to  eat in CT.  They have a seasonal menu and everything is always amazing.  In the summer there is the cutest outside eating area, and West Hartford center is a really gorgeous outdoor shopping area so the environment is amazing.  I had the scallops over butternut squash.  Even though my appetite was not was it normally is I really enjoyed this.  The scallops were cooked PERFECTLY, and the sauce was rich and flavorful.

After dinner we went back to Elizabeth’s to enjoy red velvet birthday cake (OMG) and presents!  She got some great gifts!  We got her the bamboo blinds she wanted for her office.

Elizabeth is almost 9 months pregnant and looks amazing and so healthy.  I can’t beleive our nephew will be here so soon!  In just about a month we will get to welcome him to the world 🙂  I can’t wait!  Her husband, Jon, got her a baby food maker.  Its pretty much a steamer, dehydrator, and food processor all rolled into one.  I was pretty excited about it and can’t wait to have a little one to make homemade organic baby food for 🙂


After another night of 10+ hours of sleep I woke up feeling SO much better!  I was REALLY hungry and dove right into the last of my PB puffins.  Yummmmy.  I headed off to work and was honestly happy to be there.

Since I didn’t wake up in time to make a nice lunch I headed to Subway for a 6 inch sweet onion chicken sub on 9 grain wheat bread with a side of apples.  I was so hungry, and the sandwich went right to the face 🙂

After work I headed to spinning.  I wasn’t sure if I would be able to get all the way through class, but it was worth a try.  After a 20 minute arm work out I hopped on a bike to get ready for class.  My legs felt good, but I decided to take it somewhat easy.  I didn’t want to over do it and feel back to being really run down tomorrow.  Class was great and I made it all the way to the end.

My egg puff dinner is waiting for me so I better go gobble it down 🙂  I hope you all had a wonderful Monday!!!

Hey bloggies!  I hope you had a wonderful Friday!  Mine was crazy busy.  I ended up staying at work until past 7 to get everything prepared for an early meeting/conference call I have on Monday.  I was excited when I left work because I knew it was date night!  Stephen and I try to make every Friday night our date night.  We always have so much to catch up on!  On this date night we went to a new Italian place called “Sambucca’s”  It was really good!  I ordered a pizza with ricotta, spinach, and sliced tomato!  It was delish.

I ended up having 2 slices.  I also had the side salad that came with Stephen’s meal since my husband is all but allergic to lettuce 🙂  I enjoyed two Long Trail beers with dinner as well.  Its amazing how low my tolerance is now.  After those two beers I felt very “happy” and could not stop giggling!

This morning I woke up early for a spinning class.  I went into the kitchen and turned on the garbage disposal.  The most horrible noise!  I turned it off and reached in only to find a mangled tablespoon!

Thank God we received about 3 or 4 sets of measuring spoons as wedding/bridal shower gifts!  We have lots of back ups for this poor little guy.

Before spinning I had about 1/4 of a maple nut Cliff Bar, and then it was off to class.  I took it very easy during spinning today and only stayed for 45 minutes.  I have my first group training run tomorrow so I want my legs to be nice and fresh for the 6 mile run!  I am so excited for group training!  Even though it is about 40 minutes away and it starts at 8AM, I am really looking forward to meeting some runners!

Before I left the gym this morning I took some time to post an Operation Beautiful note in the locker room.

I am off to ice and heat my hip, shower, eat, and go to a baby shower for my friend Beth.  After the baby shower I am shopping with my mother in law and sister in law for outfits for my sister in law’s baby shower that is in a few weeks!  Babies babies everywhere!  It almost makes me want  one right now.  Almost 🙂

Hey all 🙂  I hope you had a wonderful Presidents day!  For those of you who had the day off, I hope you made the most of it!

I started out the morning with one of my egg and spinach breakfast burritos!  Yum!  I had a very busy day ahead of me and knew I would need the energy!

I also went grocery shopping this AM (which was awesome because there was NO ONE in the grocery store on a Monday morning!).  Today was a cross train day for the marathon training so I did the Core Synergistics P90X DVD and went to a noon time spin class at my gym.  This DVD is still so hard!  I have done it at least 5 times now and each time it still challenges me!  Yay!  The spin class was also awesome because it was very empty!  Apparently not a  lot of people had off today!  The class was only 40 minutes long so I went to my apartment gym afterward for some elliptical action.  I was psyched because there was a “16 and Pregnant” marathon on MTV (and no I am not too old to enjoy the fine, fine MTV reality show) which helped my workout fly by.  Things unfortunately got awkward when Farrah was giving birth and an older gentleman walked in to get on the treadmill.  Me+ older man stranger+ TV birth scene with a 16 year old= AWKWARD!  I had no idea what to do.  So I hopped off the elliptical, gave him the remote, and headed home.  Horrible!

After I headed home I made a pancake!  I decided to make something I wouldn’t normally have time to make at lunch!  At pancake with a little blueberry jam and walnuts.  Too die for 🙂

The rest of the afternoon was awesome and relaxing.  Facial and a few hours spent at Barnes and Noble proved to be a winning combination.

For dinner I made this recipe from Cooking Light.  It turned out amazing!  The beef was flavorful, the sauce was perfect, and the mushrooms were the perfect touch.  I added some roasted red potatoes and green beans and you have a great Monday night meal 🙂

Hi lovely blog people! Oh man, I am in a GOOD mood today! I finally heard from my TNT mentor and am getting the training schedule soon! Until I get the training schedule for the CT chapter I will be following Katie’s Denver schedule.

This morning started out lovely (as ALL Monday mornings do) by sleeping in until almost 7:30 🙂 I feel really lucky and blessed that I get to do this on Monday mornings!! I makes me refreshed and ready to go for the week! After waking up nice and late I made some green sludge

1 cup almond milk, 1 naner, 1 handful spinach, and 1 scoop protein poweder. Unfortunately I spilled the first one all over the counter (what a way to start out the week, huh?). So I made the whole thing all over again and had to consume it at my desk since I was running late. I also enjoyed a vegan chai tea latte which I picked up at Whole Foods this weekend. This was an excellent find!! One cup latte, 1/2 cup vanilla soy milk, 1 minute in the microwave and I was in HEAVEN.

Work was good today. I had enough work to keep me nice and busy, but no pressing deadlines that stressed me out. At lunch I enjoyed some roasted brussel sprouts. Here is a picture of my days eats

Roasted brussel sprouts for lunch, some pistachios, and 2 clementines. This was great fuel for my first day of marathon training!

After work I headed to the gym for a 30 minute run on the treadmil in the “cardio cinema”. The cardio cinema at Golds is a dark roomfull of treadmils that has a huge movie screen in it. Tonight they were playing “Remember The Titans” and it made my run go by quickly. I kept steady at an 11minute/mile pace and I was glad to see that my heart rate did not go above 180. I know 180 seems really high, but thats just my heart and how it works! I can’t believe I completed the first run of the first week of training for my first marathon! So crazy to think that in 20 weeks I will be running a marathon! AHH!

Usually I take 6:30 spin on Mondays and I have been having some trouble with the fact that I won’t be able to take it anymore. After my run I went passed the spin room when class was about to start. I spotted an empty bike in the back (the ONLY empty bike in the room) and decided to hop on. My legs felt great and I knew I wanted an hour of quality time with Christine (my fave instructor!) It was a great decision and I felt great after class!

I pretty much broke every speed limit on the way home because I was STARVING. I got home and had some left over brie (and by left over I mean I hid some so that I could enjoy it by myself later 🙂 ) while I heated up a bowl of Amy’s low sodium veggie lentil soup

Dessert was a mug of Rocky Road! Yum! I like to eat ice cream in a mug because it keeps my portions in check.

Spinning Therapy by Katie

I love how a workout can completely alter my mood for the better- it is seriously the best therapy for me!

After work, I had an hour wait at the post office to try and get our darn mailbox fixed.  I’ve put in a maintenance request in paper and 3 very nice voicemails (and not in row, I was trying to not be obnoxious) but it has been a week and nothing has happened.  They were just as unhelpful today. SIGH.  The whole waiting an hour yet not getting help made my mood go downhill.   I was also getting hungry and bad mood plus hunger is not ideal.

First, I had some of the black bean/pepper/onion/corn mix I made last night.  The colors look much nicer when photographed in natural light.

Then I was pretty satisfied but after the salty/spicy snack, I wanted something cool and/or sweet.   This always happens to me when I snack, I want to balance sweet and salty. Anyone else? I had just a bit of Special K left and it pairs really well with Kefir so I had that.

Then I was feeling quite parched from the tart yogurt and a big glass of water made me FULL. It was big for a snack, that’s for sure.   All day I had been looking forward to spin class but my bad mood was persisting and with a full tummy, I kind of wanted to just nap instead.

After much internal debate, I decided I should go to my favorite spin class of all time because I start marathon training this weekend and I won’t be able to do as much of my beloved spinning.

Ten minutes into the class, I was ecstatic I decided to go and rocking out on my spin bike. I’ve found that when I don’t really want to work out, I try to do “just 15 minutes” and 90% of the time, I want to keep going.  It was possibly the best spin class I’ve ever done; I got into a zone.  The teacher, Julia, had twin babies 4 months ago and is just so excited to be exercising again, she is crazy.  The good crazy!  She just makes us work it .  Right after about the halfway point, where everyone start looking at the clock, she played Sandstorm and we did hill sprints and I don’t like to brag too much but wow, I killed it!   I was loving it so much I kind of wished we had glow sticks to wave around. My legs are like Jell-o now.

Sorry for such a long gush about spinning, it was the best class ever for whatever reason- hey, maybe it was that big snack fueling me! Spinning, will you be my Valentine? ❤

Clearly, I needed to refuel and luckily a friend was over and making pizzas (for the Lost crew). Oh what good timing! I made a big old salad with balsamic first.

The slices were small and I had 1 with pineapple and ham, and 2 with white sauce, ricotta, lemon pepper chicken, mushrooms, onion, olives, and tomato.  Very good pizza, my friends!

What are your favorite pizza toppings? I love tons and tons of vegetables and interesting sauces like barbeque  as a base.  However, when going NY Style, just cheese please.  Kelli and I are actually doing a 2-for-1: Pizza Edition later this week so I’m trying to think outside the box for something different.  ‘Night (or good morning on the east coast ;))!

How is it already Monday?!  And how is Monday almost over?!  Whoa.

So yesterday before I got tipsy from 2 beers (College Kelli would be SO mad at me) I actually got  a lot done!

I made some pumpkin pancakes with banana and plain yogurt…

And enjoyed them very much 🙂

Then I FINALLY went grocery shopping!  It felt SO good to browse the aisles of Stop and Shop 🙂  I really enjoy planning our meals for the week and shopping for them.

When I got home I got to work on a gluten free banana bread for my mother in law.  She didn’t find out about her allergy until later in life and I think she feels pretty deprived since she can’t enjoy her favorite treats.  I know she LOVES banana bread so when I stumbled upon this recipe last week I knew I had to make it!

Making the banana bread also let me break out the Kitchen Aid Mixer for the FIRST TIME!!!

I got this as a wedding present and have never used it in almost 2 years!  When I was working in public accounting I worked really long hours and never had time to bake, so it never got used.  Then we moved three different times and the thing got stuck in boxes in Stephen’s grandparents basement.  When we were there a few weeks ago to put our Christmas tree into storage I spotted it!  It was like my birthday and Christmas all rolled into one!  Woohoo!!!

While the banana bread was baking I was also a super awesome wife and made my husband some mac and cheese (organic of course)

Stephen’s mom said it actually tasted good too!  I hope I can keep baking for her so she can enjoy some tasty treats!

For dinner last night we had sushi from my FAVORITE place in Vernon, Oriental Cafe!  We used to live really close to Oriental Cafe and I got to enjoy it at LEAST once a week (this was not very good for the wallet) and I miss it SO much!  No picture though, sorry 🙂

Monday started out with some green sludge/protein shake

Almond milk, protein powder, 1 naner, and some spinach

When I got to work there were at least 20 emails waiting for me.  Oh man, its going to be a long week!  I did have enough time to sit and enjoy an Amy’s burrito around 1:30

I spread some plain yogurt over it as well to give the burrito some extra staying power.  I also snacked on trail mix throughout the afternoon.

After work I went to my favorite spin class with my favorite instructor!  Man, she kicked our butts!!!  I left sweaty and happy 🙂  This spin class is my FAVORITE way to start the week.  It always puts a positive note on a day most people usually dread.  And really sets a good tone for the rest of the week.  Do you guys have a favorite way to start your week?

When I got home I made a quick pita for dinner

3 oz salmon, some spinach, and provolone cheese.  Yum!

I am off to take a shower and CRASH!  This was one long and tiring Monday!!!!

Green Monster for Strength! by Katie

Mid-morning I snacked on a chopped apricot (I do not think I’ve ever bought a real apricot before, just the dried variety), Fage, and toffee granola from Sunflower.  This granola was tasty, but how can one go wrong when toffee is in the name?!

Lunch was leftovers from Sunday night- half a whole wheat calzone with pesto, cheese, chicken, roasted red peppers, tomatoes, and artichokes.  We go out to eat too much, but at least I usually get two meals out of it.

Sometime in the afternoon, my sister texted me this picture of a yogurt bar she just discovered at her new college- impressive amounts of fresh berries!!  I was so proud and excited when she messaged me this weekend to let me know the blog had inspired her to eat better and ask what to add to Greek yogurt! 🙂  I really don’t think she was ever unhealthy by any means though a few more vegetables and fruits couldn’t hurt.

On the way home from work, I stopped to buy a zucchini for my dinner plans and grabbed a new jar of peanut butter.  I had to try this Bee’s Knees immediately, and the little protector seal was a good scooper into my mouth. I like the subtle honey flavor.

After a couple of peanut butter scoops, I didn’t feel like a snack before the gym- SPINNING with Julia! LOVE this class.  She is tough and makes me push, push, push.  Halfway through though, the hunger hit me and my stomach felt so empty.  I was breathing so hard, I was filling up my stomach with air and kept burping! 😛  Has this ever happened to anyone?! It was awful!

I was so hungry by the time I left I needed something ASAP, and decided to try my first Green Monster.  I have seen these all over but have been skeptical. This is my skeptical-but-need-nourishment-sweaty-post-gym face.

First, I added the following to the blender:

  • handful of spinach (~1 c.)
  • whatever plain kefir remained in the carton (~1/2 c.)
  • water swished in kefir carton to get it all (~1 c.).

I thoroughly blended this because I was scared of getting a chunk of spinach while sipping which would probably make me gag and never try a Monster again.

After I had a nice pale green liquid with no dark green specks, I added:

  • 1/2 banana
  • ~7 frozen peach slices (what I had left in the bag)

The end result:

Guinness Green Monster for Strength!  The green hue and Guinness glass made me do a little jig.  Not really. Well, maybe.

I couldn’t get a picture that captured the color well but if you didn’t know there was spinach in it, you would probably guess it to be a mint milkshake.  Anyway- I LOVED IT! I need to stop being skeptical of all these new and sometimes bizarre-looking concoctions I come across on blogs!  Always good. It was cool and refreshing and filled me up (for a little while at least, I would need to add more spinach and some sort of protein or fat to make this have staying power).  In case there are any skeptics, it doesn’t taste like spinach AT ALL.  It tasted like banana and yogurt mostly.

Alright, time for a shower and then dinner, which might be just a bunch of snacks depending on my hunger levels after this Monster digests.

An Alex Weekend by Kelli

Hey bloggies!  I missed you all while I was away this weekend!  Stephen and I spent a great weekend in PA with my family.  I love visiting my nephew, Alex!  Its amazing how much he grows and develops each time I see him.  He is running around, talking A LOT, and trying all kinds of new food!  I was especially excited when I saw him eating asparagus 🙂  Maybe we have another future foodie in our family 🙂

Another great treat of the weekend was going to The Bull Run Inn!

The Bull Run was “the bar” in college and Katie and I have spent MANY nights there drinking beer, eating wings and sweet potato fries, and creating awesome memories.  Whenever you go to the Bull Run you need to get Bull Dip!  Its a spinach dip with cheddar cheese on top served with garlic pitas, and its INCREDIBLE!

We had a great lunch at the Bull Run with the whole fam including my Aunt, Uncle, and cousins!  The rest of the weekend went by in a blur, and I totally forgot to take a lot of pictures!  We got back late last night and I plopped right into bed…

This morning I woke up and tested out my new Immersion Blender!!!!  While we were in PA we did our Christmas gift exchange (since the snow ruined our trip before Christmas).  My brother had my name this year and got me the blender!  I was excited to try it out on my protein shake this morning…

1 cup almond milk , berries, 1 nanner, 1 scoop protein, and spinach.  I was SO impressed with this blender.  It was easy to use and blended everything perfectly.  I HATE when I sip a random spinach leaf that did not fully blend, and that didn’t happen at all!

Lunch was some Amy’s veggie lentil (I found a low sodium kind!)

And for a snack I packed some raw coconut, walnuts, and dried papya

After work I headed to my favorite 6:30 Monday night spin class!  I haven’t made it to this class the past few weeks due to some later nights at work.  Unfortunately, if I don’t leave my desk by 6:15 then I can’t get a bike.  Class was awesome!  Just as hard and amazing as I remember 🙂

When I got home I was starving.  I made an egg white puff with mushrooms, avocado, spinach, some swiss cheese, and some hot sauce.  I had some toast with Stephen’s grandmothers homemade raspberry jam!  I swear, she has ruined all other jams for me forever.

It really hit the spot 🙂  I hope everyone had a wonderful Monday!!!

This morning was my first spin class since getting back from Naples!  It was exactly as I expected, hard and satisfying 🙂  I love the Friday 6AM class because the instructor is always consistent.  We always do “laps” or “hills”, which end up being the same set of sprints, hills, and climbs over and over.  Each set adds a little more resistance and a little more time.  Its the perfect way to start a Friday 🙂  I came home to some delish overnight oats!

1/2 cup oats, 1/2 cup vanilla soy milk, pineapple Chobani, almond butter, pom seeds (OBSESSED!), and an apple.

Yesterday was a wonderfully ordinary day.  I slept in a little and when I woke up I made a DELISH pancake 🙂

Whole grain pancake with pineapple chobani, mango, and pom seeds (my new obsession!) with some fresh carrot and apple juice 🙂  As  you can see by the picture, I started eating it before I remembered to take a picture!  Woops!

Lunch was a huge salad with romaine lettuce, brussel sprouts, tofu, and red peppers.  Instead of dressing I squeezed a lime over top and added some sea salt.

When I got home my hubby was asleep on the couch.  I am worried he’s getting sick.  His poor grandparents had a really bad cold when we were in Florida, and his sister is sick too.  Poor girl, she is 6 months pregnant and so cannot take any cold meds.  She just needs to suffer through!  Horrible!  SO I let him sleep and headed to the apartment gym by myself for some cardio and light weights 🙂  Dinner was a crazy random array or color and taste!  Unfortunately it was not pictured though 😦  I had marinated some tofu the night before in a lemon spice marinade.  I heated it up in a fry pan with a bit of olive oil and put it in a baked sweet potato.  Random, yes.  Delish? It was surprisingly good, but nothing to write home about.
