No Such Thing as Leftover Sushi by Katie

Once John awoke from his slumber on Sunday morning/afternoon, we went house hunting.  SIKE!  We did walk around the Highlands neighborhood and go through a few open houses though- it’s fun to see what’s out there.

After lots of walking, we were both ready for some food (though it was my snack time and his lunch time).   This is John’s post flip omelet- he is a good flipper.

His cooking skills are a work in progress so he told me his strategy is to get really good at one thing and then learn one more thing, and on and on.

I made a Greek yogurt, banana, & peanut butter snack.

Peanut butter tastes so sweet compared to the tart yogurt (and there is no sugar in the PB).

For dinner, we tried to get sushi again.  I started with a seaweed salad and not sure what the issue was but I could not manage more than 3 bites of the rolls.  I felt so nauseous and full and in pain.  It sounds pathetic but all I wanted to do was get in bed.

Well, after a yogurt + frozen blueberries + granola breakfast (and some Irish soda bread I munched in the car), I got a phone call that might explain my issues.  My gall bladder is broken :(.

By broken I mean it isn’t pumping out bile to digest foods as it should.  The recommendation is for surgery.  With my thesis defense and marathon coming up, this is kind of a bummer but life doesn’t always happen how we plan it now does it?

[I had a turkey sandwich + Cold Stone Tart ‘n Tangy yogurt for lunch but my camera was forgotten.  Impressed with the yogurt!]

After work, I fit in a quick run before it got dark- my legs were feeling heavy!

Glad I pushed a bit for those negative splits. I made a green monster right after with this Terra’s Whey protein sample that was on sale.  The flavor enticed me…

I wish I had tried it just by itself for comparison but I wasn’t a huge fan of it in the monster.  Maybe it was the somewhat weird flavor combo- almond milk + banana + spinach + bourbon vanilla?  It was very sweet too.

For awhile, I was staying right on track with the Fitnessista’s Intro to Iron plan but ever since I was home last weekend, I fell off the bandwagon.  I jumped back on tonight!

  • Overhead press: 3 x 15 with 12-lb dumbbells
  • Dips: 3 x 12
  • Stability Ball Push Ups:  3 x 15
  • Lateral Raises: 3 x 15 with 8-lb dumbells
  • Cable Tricep Extension: 0- cause some guys are machine hoggers

In the ~2 weeks of slacking, I noticed my arms were not as firm.  That’s sadly fast but also great motivation!

I tried to eat the sushi from last night for dinner.  Um.  Don’t do that.  The rice was dried out and crunchy and the eel wasn’t sweet and soft anymore but more like dead eel on the beach.

Instead- whole wheat penne with mushrooms and tomato sauteed with garlic and a splash of red wine.

Oh and parmesan on top of course.

The less than normal appetite (seriously, that is way less food than usual) is bothering me but hopefully this gall bladder is the culprit. Nothing sounds all that appealing.  Every time I think of food, I start to think of how much pain I’ll be in afterwards and it’s a real buzz kill! I like food!  Anyone out there ever had gall bladder symptoms or surgery and have some good tips??

Oh my goodness, it seems every hour of my day is filled with something [usually] awesome going on and it is making time fly.  I’m all for rushing into spring- warm weather and finishing my master’s? OKAY!

I started eating part of my lunch around 11 (and I ate those oats at like 7 AM- holy cow what a holdover): small salad with spinach, avocado, invisible cherry tomatoes, and Goddess.

Before I got to part two of my lunch, some friends asked if I wanted to head to Noodles and Co. [When I opened that web page to link it, I thought the noises from the site were coming from my stomach. Dinner time anyone?] I had a small Indonesian Peanut Saute with grilled chicken, covered in Sriracha & a tomato, onion, cucumber salad that didn’t really have any dressing on it for some reason.

I went to the gym kind of late so I had half a Luna bar since my stomach was rumbling and ran 40 minute at about a 10:20 pace.  I’m going to try to stick to The Fitnessista’s Iron Pumping Plan unless it really interferes, so after my run, I did tris and shoulders- fave!!

  • Overhead press: 3 x 15 with 12-lb dumbbells
  • Dips: 3 x 12
  • Stability Ball Push Ups:  3 x 15
  • Planks: 4 x 30 seconds
  • Lateral Raises: 3 x 15 with 8-lb dumbells
  • Cable Tricep Extension: 3 x 15 with 20 lbs

The highlighted numbers are increases from last time!  Post workout, I made a Green Monster that was actually good– thanks for your comments!  It contained:

  • Big handful of spinach (I think adding way too much was my mistake last time)
  • 1/3 c. kefir
  • 2/3 c. water
  • 2 Tbsp. Jay Robb Chocolate Whey protein powder from a sample packet
  • 1/2 a frozen banana

I had plans for an interesting dinner (featuring the 2-for-1 ingredient of the week- shrooms) but it might have to wait until tomorrow.

Hi lovely blog people! Oh man, I am in a GOOD mood today! I finally heard from my TNT mentor and am getting the training schedule soon! Until I get the training schedule for the CT chapter I will be following Katie’s Denver schedule.

This morning started out lovely (as ALL Monday mornings do) by sleeping in until almost 7:30 🙂 I feel really lucky and blessed that I get to do this on Monday mornings!! I makes me refreshed and ready to go for the week! After waking up nice and late I made some green sludge

1 cup almond milk, 1 naner, 1 handful spinach, and 1 scoop protein poweder. Unfortunately I spilled the first one all over the counter (what a way to start out the week, huh?). So I made the whole thing all over again and had to consume it at my desk since I was running late. I also enjoyed a vegan chai tea latte which I picked up at Whole Foods this weekend. This was an excellent find!! One cup latte, 1/2 cup vanilla soy milk, 1 minute in the microwave and I was in HEAVEN.

Work was good today. I had enough work to keep me nice and busy, but no pressing deadlines that stressed me out. At lunch I enjoyed some roasted brussel sprouts. Here is a picture of my days eats

Roasted brussel sprouts for lunch, some pistachios, and 2 clementines. This was great fuel for my first day of marathon training!

After work I headed to the gym for a 30 minute run on the treadmil in the “cardio cinema”. The cardio cinema at Golds is a dark roomfull of treadmils that has a huge movie screen in it. Tonight they were playing “Remember The Titans” and it made my run go by quickly. I kept steady at an 11minute/mile pace and I was glad to see that my heart rate did not go above 180. I know 180 seems really high, but thats just my heart and how it works! I can’t believe I completed the first run of the first week of training for my first marathon! So crazy to think that in 20 weeks I will be running a marathon! AHH!

Usually I take 6:30 spin on Mondays and I have been having some trouble with the fact that I won’t be able to take it anymore. After my run I went passed the spin room when class was about to start. I spotted an empty bike in the back (the ONLY empty bike in the room) and decided to hop on. My legs felt great and I knew I wanted an hour of quality time with Christine (my fave instructor!) It was a great decision and I felt great after class!

I pretty much broke every speed limit on the way home because I was STARVING. I got home and had some left over brie (and by left over I mean I hid some so that I could enjoy it by myself later 🙂 ) while I heated up a bowl of Amy’s low sodium veggie lentil soup

Dessert was a mug of Rocky Road! Yum! I like to eat ice cream in a mug because it keeps my portions in check.

Where did the weekend go? by Kelli

How is it already Monday?!  And how is Monday almost over?!  Whoa.

So yesterday before I got tipsy from 2 beers (College Kelli would be SO mad at me) I actually got  a lot done!

I made some pumpkin pancakes with banana and plain yogurt…

And enjoyed them very much 🙂

Then I FINALLY went grocery shopping!  It felt SO good to browse the aisles of Stop and Shop 🙂  I really enjoy planning our meals for the week and shopping for them.

When I got home I got to work on a gluten free banana bread for my mother in law.  She didn’t find out about her allergy until later in life and I think she feels pretty deprived since she can’t enjoy her favorite treats.  I know she LOVES banana bread so when I stumbled upon this recipe last week I knew I had to make it!

Making the banana bread also let me break out the Kitchen Aid Mixer for the FIRST TIME!!!

I got this as a wedding present and have never used it in almost 2 years!  When I was working in public accounting I worked really long hours and never had time to bake, so it never got used.  Then we moved three different times and the thing got stuck in boxes in Stephen’s grandparents basement.  When we were there a few weeks ago to put our Christmas tree into storage I spotted it!  It was like my birthday and Christmas all rolled into one!  Woohoo!!!

While the banana bread was baking I was also a super awesome wife and made my husband some mac and cheese (organic of course)

Stephen’s mom said it actually tasted good too!  I hope I can keep baking for her so she can enjoy some tasty treats!

For dinner last night we had sushi from my FAVORITE place in Vernon, Oriental Cafe!  We used to live really close to Oriental Cafe and I got to enjoy it at LEAST once a week (this was not very good for the wallet) and I miss it SO much!  No picture though, sorry 🙂

Monday started out with some green sludge/protein shake

Almond milk, protein powder, 1 naner, and some spinach

When I got to work there were at least 20 emails waiting for me.  Oh man, its going to be a long week!  I did have enough time to sit and enjoy an Amy’s burrito around 1:30

I spread some plain yogurt over it as well to give the burrito some extra staying power.  I also snacked on trail mix throughout the afternoon.

After work I went to my favorite spin class with my favorite instructor!  Man, she kicked our butts!!!  I left sweaty and happy 🙂  This spin class is my FAVORITE way to start the week.  It always puts a positive note on a day most people usually dread.  And really sets a good tone for the rest of the week.  Do you guys have a favorite way to start your week?

When I got home I made a quick pita for dinner

3 oz salmon, some spinach, and provolone cheese.  Yum!

I am off to take a shower and CRASH!  This was one long and tiring Monday!!!!

Only Tuesday? by Kelli

Hey bloggies.  Man, it was a long day and it is definately going to be a long week.  The first two days of my week got messed up yesterday when one of my clients lost power and they couldn’t approve any of my work!  That work got pushed to today, which was already pretty full.  Needless to say I knew I would be running around like a crazy person today trying to get everything done.

Since I knew it would be a crazy day I fueled up this morning!  I am out of almond milk, so  I made my shake this morning with Kefir!

I hadn’t tried Kefir yet and was anxious to give it a taste.  I filled my smoothie with 3/4 cup Kefir, some WF berries, and a scoop of protein powder.  After a little whip with the immersion blender it was all set to go 🙂

For lunch I packed another Amy’s Veggie Lentil.  On a crazy day like today I needed something easy and quick.

My afternoon snack was some raw coconut, nuts, and goji berries.

I got home from work late and was ready to totally destress, relax, and eat a good meal.  I put together some brussel sprouts and BBQ tofu to pop into the oven after my workout!

I love this BBQ sauce!  So spicy!  Both were cooked at 400 degrees with 25 minutes.

After a 3 mile run I was ready to eat and CHILLAX on the couch.  And thats just what I did 🙂

Even on days like today I am SO thankful for my job.  It is challenging and keeps me busy!  My husband and I are so lucky to have the jobs we do, especially when so many people do not have jobs right now.  We were hit hard by the horrible economy as well, but we got through it and that just makes me THAT much more thankful and grateful for my position!

On another note, I definately need some good vibes and prayers tonight for my sister-in-law.  She is 30 weeks pregnant and was admitted to the hospital tonight after experiencing intense pain and some contractions.  The baby is doing well, but I think they are going to keep her overnight for observation.  She has had such an amazing pregnancy so far and we are hoping that this is just a little bump in the road.  Your good thoughts and prayers are much appreciated 🙂

An Alex Weekend by Kelli

Hey bloggies!  I missed you all while I was away this weekend!  Stephen and I spent a great weekend in PA with my family.  I love visiting my nephew, Alex!  Its amazing how much he grows and develops each time I see him.  He is running around, talking A LOT, and trying all kinds of new food!  I was especially excited when I saw him eating asparagus 🙂  Maybe we have another future foodie in our family 🙂

Another great treat of the weekend was going to The Bull Run Inn!

The Bull Run was “the bar” in college and Katie and I have spent MANY nights there drinking beer, eating wings and sweet potato fries, and creating awesome memories.  Whenever you go to the Bull Run you need to get Bull Dip!  Its a spinach dip with cheddar cheese on top served with garlic pitas, and its INCREDIBLE!

We had a great lunch at the Bull Run with the whole fam including my Aunt, Uncle, and cousins!  The rest of the weekend went by in a blur, and I totally forgot to take a lot of pictures!  We got back late last night and I plopped right into bed…

This morning I woke up and tested out my new Immersion Blender!!!!  While we were in PA we did our Christmas gift exchange (since the snow ruined our trip before Christmas).  My brother had my name this year and got me the blender!  I was excited to try it out on my protein shake this morning…

1 cup almond milk , berries, 1 nanner, 1 scoop protein, and spinach.  I was SO impressed with this blender.  It was easy to use and blended everything perfectly.  I HATE when I sip a random spinach leaf that did not fully blend, and that didn’t happen at all!

Lunch was some Amy’s veggie lentil (I found a low sodium kind!)

And for a snack I packed some raw coconut, walnuts, and dried papya

After work I headed to my favorite 6:30 Monday night spin class!  I haven’t made it to this class the past few weeks due to some later nights at work.  Unfortunately, if I don’t leave my desk by 6:15 then I can’t get a bike.  Class was awesome!  Just as hard and amazing as I remember 🙂

When I got home I was starving.  I made an egg white puff with mushrooms, avocado, spinach, some swiss cheese, and some hot sauce.  I had some toast with Stephen’s grandmothers homemade raspberry jam!  I swear, she has ruined all other jams for me forever.

It really hit the spot 🙂  I hope everyone had a wonderful Monday!!!

Workin Hard by Kelli

Hey all 🙂  I hope you had a great Monday!  Per usual, I slept in a little this morning.  I went to bed feeling a bit under the weather last night, and woke up feeling just as bad.  I can always tell when I am getting sick when I have little to no energy.  To top that off I had almost zero appetite today.  Boo 😦  I still managed to drink a protein shake this morning…

The usual suspects are found in this smoothie.  1 cup almond milk, 1 nanner, 1 scoop vanilla protein powder, handful of spinach, and lots of cinnamon.

I went to work feeling just, blah.  Luckily as the day went on my energy went up, but my appetite was no where in sight.  I never do this, but I ended up skipping lunch (because I just couldn’t eat it) and just snacking on some apricots and nuts.

I came home and wanted some warm and soothing for dinner.  I had some butternut squash cut up so decided to make some soup…

Cubed butternut squash,  some shallot, minced garlic, and S&P.  All boiled together for 20 minutes in 2 cups all natural chicken broth (low sodium) and the rest water.  When everything is done boiling dump off some of the liquid (how much depends on how thick you like your soup.  If you like it super thick like us, dump almost all the liquid out).  Put into a food processor, puree, and enjoy 🙂

I am off to bed.  I have no energy again, boo 😦  I hope you all had a good Monday 🙂
