Breakfast was an old standby- spinach and such with eggs + laughing cow.  Can’t forget the perfect complements of ketchup and toast with Heather’s Strawbs jam.

After an amazingly productive morning (withOUT coffee for the first time in weeks- no headache either!), I was about to pull out some pasta but I was tempted with an invite to Choice City Deli.  Only my favorite lunch option in the FoCo.  The walk there is about 15 minutes and the day was perfect for a nice long walk-  50’s and sunshine! All I could think about was running later.

Unfortunately, there is no picture of lunch- but it would be well-worth recreating at home.  Portobella mushroom + grilled pineapple + artichokes + teriyaki sauce + provolone.

The run was on a recreational paved trail, with some diversions onto the dirt paths where it wasn’t too muddy.

Look ma, no heels!  All the dirtiness is concentrated on the frontal areas, which my calves are really noticing.  My pace today was much more in line with marathon training- ~10:15 for the whole thing, with HR under 170.

I ate some PB toast while I started prepping dinner- black bean potato skillet (2-3 portions).

First, I started making brown rice since it takes forever and a day.  Meanwhile, I chopped fingerling potatoes and tossed them into a pan with a touch of olive oil.  I let those cook over medium while I chopped half of each pepper and a onion quarter

I ended up letting the veggies sautee for about 10 minutes and adding in half a chopped tomato too.

I found these local beans at the grocery store tonight and based my dinner around them.

After the veggies were a bit softened, I added the black beans.  I drained off most of the liquid and then rinsed the can with water, adding that back to the pan.  I turned down the heat and let it all simmer away while the rice finished.

Final product- brown rice, topped with bean, potato, veggie mixture, topped with salsa, topped with guac, topped with a spoonful of Greek yogurt!

Kinda like my own personal Chipotle bowl.  Which, it just so happens, was what I had in mind before I hit up the grocery store.

Oh, and guess who was cleverly planted outside of the grocery store??  Girl Scouts!  Um, does anyone else not like thin mints, cause I have yet to find anyone else.  I’ll take a somoa please or a lemon whatever it’s called now, x2.

The night is young, so my willpower will be battling these once-a-year yummies for awhile longer.

Spring Is In the Air by Kelli

Hey all! I hope you had a wonderful Tuesday 🙂 I know I did. After my last post I headed off to work with my food for the day in tow. The morning flew by in a whirl of emails and projects that needed to go out the door by noon. Before I knew it it was after 12:30 and I headed to the kitchen to put together my lunch. I toasted the whole wheat bread and added all the veggies. I even took a picture of the whole thing put together at my desk. I don’t normally take pictures of my food at work due to the fact that I work at a very low cubicle with tons of people around at all times. I decided to venture out today though and sneak a pic 🙂

Tha sandwich was everything I wanted. Warm crunchy bread, cold crunchy veggies, and flavorful hummus. Yum! I had red peppers left over so I had them on the side for some extra crunch. After lunch I had a few errands to run and I couldn’t believe it when I got to my car and the thermometor read 50*! (I swear it said 50 RIGHT before I took this!)

This afternoon I snacked on some Oiko’s strawberry greek yogurt with frsh strawberries and some Kashi GO Lean cereal. This snack turned into more of a pre-dinner since I didn’t get to eat it until almost 4:30. I’m glad I got it in though because right after work I was heading to the gym for my 4 mile easy right as part of marathon training.

The run felt good and my hip didn’t hurt at all! THANK GOD! I have dropped a little bit of weight since starting my training, so I think that might have something to do with the hip pain going away. Yay!

I am off to heat up some of the pasta that Stephen made for dinner! Gotta love a husband who can cook 🙂 Night all!



Welcome back, old friend by Kelli

Good morning! Happy Tuesday! I really need to catch up on all of your blogs. I feel like instead of clicking my saved blogs each time I get on my computer I am on Remax or Century 21 looking for houses to tour! House hunting is a full time job. We have focused on searching for “the worst house on a great street” type of deals. Stephen is so handy that we could really fix up anything. I would like to focus on being in a good neighborhood and in a good school district. I am secretly looking for places with horrible kitchens so that I can design and build my dream kitchen 🙂 sneaky sneaky!

Last night I finally got to the grocery store for some veggies for the week. Since it was late I did not get the full order, and plan on shopping for the rest tonight. I did have a chance to get banana’s and spinach. That only means one thing in my mind, green protein shake!

I havn’t had one of these babies in almost a week. They have really become my favorite breakfast! They fill me up and keep me going until lunch. I rarely have time in the morning to munch on a snack and I usually don’t get to eat lunch until around 1PM (I dont mind though, it makes the afternoon go by much faster!) so I need something that sticks to my ribs. These protein shakes do just the trick 🙂

I also picked up some whole wheat chiabatta bread last night. I spiraled some veggies this morning so I could put together a nice veggie sandwich with hummus for lunch. I’m still debating what I’ll pack for a snack… hmm…

Thank goodness I am going to the grocery store for the full order tonight. I used the last of this stuff this morning…

Wow, I honestly cannot live without this now! I mix 1/2 cup with 1/2 cup of vanilla soy milk and nuke it for 2 minutes. Its a great warm drink for the morning to give me a little caffeine jolt 🙂

Hockey, Beer, and Sushi by Katie

This morning seems ages and ages ago.  Friday night feels like it was weeks ago but the weekend flew by overall.  Isn’t time funny that way? Was your weekend slow and relaxing or did it go by way too fast?

Sunday afternoon involved hockey game watching of course!  And beers.  Because when you go to a bar at 1 PM, what else would you do?  Colorado bars always have an impressive beer selection on draught.

I tried the newest New Belgium addition- an IPA.  An IPA is very hoppy (lots of floral/earthy smell and a distinct bitterness) and while I enjoy tasting them, they are not the type of beer you can drink all night- not that I ever do that ;).

However, New Belgium is rarely disappointing so I decided to try the Ranger IPA.

Thought #1: WOW this smells so good, lots of hops though!

Thought #2: Hmm this isn’t overwhelming at all, well balanced.

Thought #3: Loving the lack of a really bitter aftertaste that most IPAs have!

Overall impression- this was probably one of the most drinkable IPAs I have tried.

There were also some nachos split among us but no picture documentation.  My appetite has been so strange lately.  I’m either starving every single hour or I go for wayyyy longer than usual with no desire for food.

After the hockey game (congrats Canada), I fell asleep for a little.  Thanks, beer and nachos, thanks :-P.  John and I made a late dinner, I enjoyed an egg sammie with spinach.

On the go this AM, I ate another eggy delight: WF breakkie burrito of the veggie sausage variety. SO GOOD.  This lasted as long as possible, I ate little bites.

Lunch was also out and about, at Noodles & Co. but no picture!  I’ve been the worst at remembering my camera lately!!

Yet again, dinner was out too.  It was the kick-off of the local restaurant week AND a friend’s birthday.  How was I NOT to go out?  To start, I shared a vegetable roll + 1/2.

For my main course, I had two sushi rolls: Philly and Scallion Yellowtail.  The tempura roll that looks insanely good was actually not mine, but I snagged a bite- ahhhhmazing.

The Philly roll is hated on all too often but the cream cheese + avocado really balance well with the huge amounts of wasabi I add.

Last but not least, a chocolate martini.  For weeks, my roomie + boyfriend + me as the third wheel have been enjoying Monday martini night at the Chocolate Cafe.  Well guess what? They’ve been perfected in-apartment and are delish.

Oh oh, back the bus up, there was a run and a lift sesh today!  Once upon a time, when I played soccer, I had the nickname “Speedy McMetzy”due to ridic mile paces and my love of sprinting (I still love sprints, this marathon pace is hard for me).  The first week running with Garmy was quite a shock, since I somehow I thought I was still running around an 8:00 minute mile pace.  Well today, something was going on in my legs (no ‘roids, I promise):

  • Mile 1- 8:30
  • Mile 2- 8:24
  • Mile 3- 8:20
  • Rest of the 30 minutes- 9:05 (up a hill)

It was shocking! The weirdest part was my heart rate barely differed from my heart rate on Saturday.  However, this was 3 miles versus 10 miles, and I would put money on the fact that after a few more miles at this pace, my hear rate would start to rise.  But hey, it was fun while it lasted.  AND negative splits.
