Good bowl #1: Why so blue?

  • 1/4 c. oats
  • 1 c. water
  • 1/2 banana
  • 1/2 c. blueberries
  • 1 egg white
  • blobs of Greek yogurt
  • sprinkle of granola

I got to work bright and early at 7 AM, I love being the first one there! Peace and quiet to accomplish tons of work.

Good bowl #2: Leftovers make the best lunches.

I let lunch digest and then decided to take a work break and run OUTSIDE.  Since my route is pretty darn gorgeous, I brought my camera on it’s first run.  I saw a fox!

Uh-oh! Then I deviated and had something from a glass.

Good pint glass #1: Green Monster, enjoyed while tennis-ball rolling my calves. Thanks for the Tweet tip, Heather!

  • Bunches of spinach
  • 1/2 a banana
  • 1/2 packet of Jay Robb chocolate whey protein powder
  • 3/4 c almond milk + some water
  • Couple a ice cubes

Good bowl #3: Frozen chili souped up (chilied up?) with more beans, a bit of tomato paste, and ancho chipotle chilies.  Topped with avocado and Greek yoyo.

I didn’t originally like this chili very much but I let the update version simmer for an hour and it thickened up so well.  SPICY!

Good pint glass #2: Frambozen, a winter-only New Belgium treat.  Fab complement to the chili!

Good plate #1 and only of the day: Goat cheese and mushroom quesadilla.  This was pretty itty-bitty as far as ‘dillas go but with the chili, I didn’t need much. It also looks terrible..

Also enjoyed- last dough ball from Ashley!

The Spaghetti Squash That Wasn’t by Kelli

Hey bloggies! I hope everyone had a great Tuesday! Mine started out the way everyday should… with a pancake!

Whole wheat pancake with lots of blueberries! I topped this baby with some plain Oikos yogurt. Paired with some orange juice and this was the perfect start to the day! Unfortunately when I went to my car I was greeted with a winter wonderland. I had no idea it was supposed to snow! It ended up snowing/icing for most of the day! Its mornings like this I wish you still got snow days passed the age of 18 🙂

Today turned into one of those days where the first time I looked at the clock it was 12:30. I didn’t have time to eat my lunch, so I snacked on some pistachios. When I had some time to eat It was almost 2, but I wasn’t hungry too hungry so I didn’t end up eating it until 3. This was when I finally enjoyed some brussels sprouts and roasted red potatoes.  At the last minute I also added some of last nights left over beef.

Oh roasted brussels sprouts, how I love you. It is so funny how much I love brussels sprouts now. I remember one time when I was 5 or 6 and my Mom mad brussels sprouts. I refused to eat them! They were smelly and felt funny on my tongue. Now I could honestly eat them everyday and be completely content.

I ended up staying at work until 7:30 or so (I love that it feels like I worked so late. haha. I love not bring in public accounting anymore). So around 5 I enjoyed what was supposed to be my afternoon snack

Blueberries, plain yogurt, and a drizzle of honey. It really hit the spot and kept me satisfied until I wrapped everything up and headed home to my lovely husband 🙂

Dinner was supposed to be spaghetti squash with pesto, but it was way too late to make it by the time I got home. Luckily said husband had made some pasta with vodka sauce. I had about half a cup of the pasta and half a glass of red wine and felt quite satisfied, indeed 🙂

I was supposed to run 4 miles tonight as part of marathon training. Since I had gotten home so late, and it was still snowing I decided to swap nights. I moved my arms and abs workout that was supposed to be Wednesday night and did it tonight, and tomorrow night I will run the 4 miles. If you are looking for a hard ab workout try P90X AB-X! OMG! My abs were screaming. I have done this DVD quite a few times now and still cannot make it all the way through without feeling like I’m going to rip in half. At least its over 🙂

I am off to read. I bought “You’re such a pretty Fat” yesterday by Jen Lancaster (author os “Bitter Is the New Black”) and it is hilarious. I really enjoyed “Bitter is the New Black” and am going to enjoy this book just as much. It is a brutally honest story about a woman trying to lose weight. Granted the woman is incredibly stubborn, but I feel like she is saying what a lot of people are thinking.

Meatless Monday Quickie Veggie Stir Fry by Katie

Well hello! One advantage of using the blackberry for photos was flexibility of posting at any computer.   I’ll try to make up for fewer posts with better pictures and better content ;).

I woke up looking forward to my leftover pancakes!  To add staying power, I topped it with some banana slices and peanut butter before microwaving and everything got nice and melty!  No syrup necessary… okay, little bit of syrup.

When Jorge asked me what I was doing for lunch, I didn’t even realize it was noon- hooray for Monday morning flyin’ by and a stick to the ribs breakky.   I had brought a frozen Kashi delight but the microwave was broken!  Not going to lie, getting out of the office sounded great too.  Going somewhere off campus for lunch means a decent 10-15 minute walk and it feels good to stretch out and have come real, live human friend interaction.  Love the blogs and the twittering [and the work?] but need some face-to-face time.

We went to Cilantro Grille and I ordered 2 fish tacos- seasoned fishies, avocado, shredded cabbage, mango chunks, red onion, sprinkle of cheese.  Very delicious.

Pre-taco time, I had some of this totally fresh pico that Jorge ordered.  It looks like Heather’s bruschetta! The salsa tastes almost as good- some cilantro instead of basil, and probs less oil + more vinegar?

It came with rice and black beans, which I covered in mango/ scotch bonnet hot saucey.  I like this little place because everything is SO fresh and they make it when you order it.  The portions are perfect and leave me satisfied without feeling like I’m going to pass out in a food coma on my desk.  Last but not least, the prices are completely reasonable.

This meal held me over well too! Around 5:30, I ate a bit of leftover Ashley’s fruit and nut quinoa and it powered me through an effortless run! Seriously, the 30 minutes at a 10 minute mile felt effortless.  I suppose this is a great thing!  Throughout the run, I focused on how my foot was landing- I’m trying to reduce my heel striking and improve my technique.  It felt fine during the run and cool down walk but after I stepped off the treadmill, my calves were soooo tense as in even standing hurt.  Lots of stretching made it all better.

On Saturday, when I was being a high-energy, endorphin-addict spaz, I did a random arm workout.  My little cheat sheet was forgotten and I ran around doing whatever piqued my interest.  Today, I got back on track with the Fitnessista Iron Intro Plan, Day 1.

  • Overhead press: 3 x 15 with 12.5-lb dumbbells
  • Dips: 3 x 12
  • Stability Ball Push Ups:  3 x 15
  • Planks: 4 x 30 seconds
  • Lateral Raises: 3 x 15 with 5-lb dumbells
  • Cable Tricep Extension: 3 x 15 with 20 lbs

After the gym, I hit up the grocery store for some essentials and saved a  TON of money with coups, like ten bucks. No joke!

I came home and felt like a big bowl of stir-fried veggies, as they were missing from my life all weekend.

Broccoli + cauliflower + onion + mushrooms + peas + tomato + pineapple, cooked with a few shakes of soy sauce, a couple TBSPs of peanut sauce, and sriracha.  I let it all simmer together on low heat while cooking brown rice.  Meanwhile, since I was starving, I had 2 leftover bruschetta (sadly it’s all gone) and a sliver of the Dominoes my roommate and company ordered.  They concur that the new and improved version really is improved.

I’m going to drink tons of water now so I don’t feel too salty from the quick stir-fry.

Some chocolate might happen from the care package my dad and stepmom sent.  I was probably most excited for the hair ties: my thick hair and sweaty mess workouts cause me to stretch them out and break them constantly.
