Oh my goodness, it seems every hour of my day is filled with something [usually] awesome going on and it is making time fly.  I’m all for rushing into spring- warm weather and finishing my master’s? OKAY!

I started eating part of my lunch around 11 (and I ate those oats at like 7 AM- holy cow what a holdover): small salad with spinach, avocado, invisible cherry tomatoes, and Goddess.

Before I got to part two of my lunch, some friends asked if I wanted to head to Noodles and Co. [When I opened that web page to link it, I thought the noises from the site were coming from my stomach. Dinner time anyone?] I had a small Indonesian Peanut Saute with grilled chicken, covered in Sriracha & a tomato, onion, cucumber salad that didn’t really have any dressing on it for some reason.

I went to the gym kind of late so I had half a Luna bar since my stomach was rumbling and ran 40 minute at about a 10:20 pace.  I’m going to try to stick to The Fitnessista’s Iron Pumping Plan unless it really interferes, so after my run, I did tris and shoulders- fave!!

  • Overhead press: 3 x 15 with 12-lb dumbbells
  • Dips: 3 x 12
  • Stability Ball Push Ups:  3 x 15
  • Planks: 4 x 30 seconds
  • Lateral Raises: 3 x 15 with 8-lb dumbells
  • Cable Tricep Extension: 3 x 15 with 20 lbs

The highlighted numbers are increases from last time!  Post workout, I made a Green Monster that was actually good– thanks for your comments!  It contained:

  • Big handful of spinach (I think adding way too much was my mistake last time)
  • 1/3 c. kefir
  • 2/3 c. water
  • 2 Tbsp. Jay Robb Chocolate Whey protein powder from a sample packet
  • 1/2 a frozen banana

I had plans for an interesting dinner (featuring the 2-for-1 ingredient of the week- shrooms) but it might have to wait until tomorrow.

Hey bloggies 🙂 How is your Tuesday? Mine is going wonderously. I can’t believe its almost over!

Tuesday started out with my new fave cereal; PB Puffins! With almond milk and a nanner 🙂

I packed up my eats this mornin and was on my way

Some Amy’s soup, two clementies, and trail mix

I also brought some of my new favorite chair tea! The vegan chai I tried yesterday made another appearance today in a nice to go mug to take to work

Work was rather boring today. I am waiting on a lot of information from clients and I have a feeling that its all going to come at once and I’m going to get slammed. Boo 😦 Since I did not have much work today I decided to come home for lunch. I relaxed a bit and ate my soup from the comfort of my couch 🙂 I love when that happens!

Today was Day 2 of marathon training and we had to run 40 minutes. Luckily the hubby came with me for my work out! I was stoked 🙂 He was on the eliptical next to my treadmil while I ran for 40 minutes at about an 11:30 min/mile pace. My heart rate stayed below 180 for most of the run. At one point it went to about 185 and I slowed down to a 12 min/mile pace.

When we got back from the workout it was time for dinner! I made a lovely butternut squash soup while the husband cooked up a little beef. I ended up having about half a bowl of soup with 3 oz. of beef on the side. And a large scoop of rocky road for dessert!!

It is supposed to snow 13 inches here tonight into tomorrow morning! CRAZYY!! I brought my lap top and some work home in case I need to work from home due to the snow. I’m really hoping I can’t get out of the driveway! There is nothing better than working in your pj’s!!

I hope everyone had a wonderous Tuesday!

Blueberry Banana Oats by Katie

As I did my daily blog reading yesterday, I saw a bowl of oats on Run Eat Repeat that inspired me.  What? You don’t get inspired by blueberries and oats?  Since I had just bought frozen blueberries on sale, I figured it was fate and made my own blueberry banana layered oats.

I combined the usual over medium heat:   1/3 c. of rolled oats + 1 c. water (all out of almond milk) + 1/2 a banana.  When it was almost done, I warmed up about a cup of frozen blueberries in the microwave until they were just starting to burst (about 40 secs in my microwave).

I poured half the banana oats in my to-go container, added half the blueberries, other half oats, other half blueberries.  On top, I sprinkled flax and a tiny bit of PB.

All mixed up while I ate it.

This was GOOD and really filling. I love when blueberries are cooked like in blueberry crisp, which this reminded me of.   Hint- tomorrow I might use that as inspiration for my breakfast.
