Hey all!

Today was crazy, per usual.  I got into an argument with a client over where to group $80.  $80 in a multi million dollar hedge fund is NOTHING, and which bucket it goes really DOES NOT matter, but I was right and had to argue.  As a result I was late for spinning and didnt get a bike 😦 Boo!  I need to spin!

Since I missed the class I opted for 45 minutes of intervals on the elliptical.  I did 2 minutes at a normal speed followed by a 30 second sprint for 45 minutes.  I came home for a living room weight session!

My “Home Gym”

My workout:

Bended row with 8 lbs weights, 3 sets of 15

Bended flys with 8 lbs weights, 3 sets of 15

Shoulder press with 10 lbs weights, 3 sets of 10

Arnold press with 10 lbs weight, 3 sets of 10

I did 15 jumping jacks between each set as well.

After the workout I got right to work on the Latkes!  You can see how they were prepared at Shedding It and Getting it.  I did make a few substitutions though.  Instead grating the potato I used the food processor, I used egg whites instead of egg substitute, and whole wheat flour instead of all purpose flour.

After everything was put together I decided to grill the cakes on the panini grill instead of in a pan.  They turned out a little flatter than they normally would as a result but still delish!

I enjoyed mine with some ketchup and asparagus!  I know, its an off combo but we are playing the “lets use up everything in the fridge before we leave for Florida” game.
